How it is made

After the grapes are softly pressed, they are fermented in steel containers at a controlled temperature of 27°C for at least 7 days. The Sangiovese and Merlot grapes are vinified separately, and then blended in November. Then the dried Merlot grapes are added only in January/early February, after which the ripening continues in steel vats for another three months.
