How it is made

Maceration with the skins; during fermentation, which lasts around 15-20 days, light but frequent pumping over and délestage is carried out to add complexity. To guarantee optimum production of colour and tannins, the fermentation takes place in stainless steel containers at a controlled temperature of 30-32°C. At the end of the fermentation, the wine is aged in oak barrels for at least 2 years.

Vinification
The grapes are picked by hand.Red wine vinification, with maceration of the skins for 20-25 days, at controlled temperatures of up to 24°C.

Aging
For at least 30 months, in 50hl Slavonian oak barrels. The wine is left to rest in the bottle for at least 6 months

Harvest
From the 5th September to the 5th October

Average altitude of the vineyards
From 120 to 650m MSL

Terrain type
The Montalcino hills have numerous soil profiles, as they formed in various geological eras, but they are primarily a shell-rich clay mix.

Mainly spurred cordon, but some use of Guyot
