How it is made

The ripe grapes are left in their skins for around 10-12 days. The fermentation takes place at a controlled temperature of 27-28°C. Brief but frequent pumping over is also carried out, and the saignée technique is used to increase the wine's noble polyphenolic richness. After being removed from the skins, the wine is conserved in steel to complete its malolactic fermentation. It is then aged in French and American oak barriques for 10 months.
